It’s fair to say that I am doing okay so far. I’m new to this, so I’m allowed to make a few mistakes. However, the first mistake I’m making is somehow eating far too little fiber. I’m also not getting all of the vitamins I need from my food, which is an obvious indicator that I’m eating too much easy stuff. I know, I know, the Taco Bell did not help me here, but even leaving that day out of the tabulations I am still having a hard time coming up with enough vitamins and fiber. Today, for example, the tally is standing still at 11 grams. That’s really bad, less than half of what I need in a day.
My goal for the next week is to get the full 25 grams, even if it means going over on my calorie count. To help myself, I got a huge bag of baby carrots, which are an easy way to add fiber and also easy to carry along to work. And I am going to resort to morning toast or oatmeal to get something solid in my stomach as early as possible. Amen.
