Vegan Hominy Chili Recipe

I'm simmering this in the crock pot right now and the house smells fantastic! I'm so excited to eat it. But the real point of writing down this recipe is that I figured out the nutrition basics for it, so I'd like to be able to make it again and not have to figure that out again. Yes, laziness is indeed my motivation here. No apologies.

1/2 roll of Lightlife's Gimme Sausage! Vegan sausage crumbles (see photo, inset)
1/2 yellow bell pepper, diced
1 yellow onion, diced
1 T olive oil
1 can (15 oz) chili beans, salt-free, with canned sauce
1 can (24 oz) white hominy, drained and rinsed
1/2 jar (20 oz) green salsa (any kind will do)
1/2 can (6 oz) green chiles, chopped
1/4 c. water or vegetable broth, if you have some
pinch of smoked paprika
salt & pepper to taste

On the stove, heat a large skillet with the olive oil until hot. Add diced onion and pepper. Saute until lightly browned and add sausage crumbles. Stir and mix in to break up the veggie meat, which in this case actually separates much like real beef. Put this mixture directly into your crock pot (or you can also make this on the stove too). Add everything else to the crockery and cook for 8 hours (or as long as you can on the stove, technically it's ready right away, but I like it to cook as long as possible to mix the flavors). Serve with sour cream and tortilla chips, or grated cheddar and scallions, your choice. Serves 6 at 1-1/2 c. per person.

Nutrition info (doesn't include toppings): 208 calories, 4 grams fat, 12 grams protein, 33 carbs, 7 grams fiber. Pretty good for the hefty serving you get here!
