PB-Banana Smoothies
I don't know about you, but I tend to crash in the afternoons. Around 2:30-ish, my eyelids are droopy and I need both a nap and a snack. I've found that if I have a snack with some protein before zombie mode strikes, I save myself from chomping relentlessly and avoid the crash entirely. Most of the time. I wish it were foolproof.
For me, afternoons are about cold things. Lately I've been into iced coffees. So I have extra coffee chilling at all hours for something like this. If you don't have coffee ready, use milk or water.
PB-Banana Smoothies for Two
1/2 banana
1/2 cup plain or vanilla yogurt
1/4 cup leftover coffee, cool
1 T smooth peanut butter
honey to taste (optional)
ice
Mix everything but the ice in a blender until smooth. Taste, and add honey to sweeten if needed (if you use vanilla yogurt you may not need it at all). Add ice 1/2 cup at a time to get the desired consistency. Split between two cups and sip, or freeze the second serving for another day.
Bananas getting over-ripe?
Peel and slice rapidly-spoiling bananas and freeze them in a ziploc. You can make amazing smoothies by using the frozen bananas instead of ice or you can let them defrost nearly all the way — they'll be mushy — and then bake them into banana bread.
